When they ate the fruit, they took upon themselves to judge what is good and what is evil. Their act was one that showed they know longer wanted to trust that everything from God is good.
Their very first act of their new found "freedom" was to judge their nakedness was not good. In that sense, their eyes were "opened". They had to see and make judgments on their own if something was "good" or "evil".
When they were banished from the sanctity of God, they no longer drew from God. They had to work with their hands and to depend on their own judgments. Their so-called "knowledge of good and evil" at that point of time was at best infantile. For only God has the full knowledge to judge.

Why do god want to prevent adam from real eternal life ? It seems to be as easy as eating another fruit from the tree of life. The way it is written suggest a constant guard of god to men, which is evident from the tower of babel as well.
