There is no way to map 1981 with rooster year 'cos you do not have a reference.
There are people born in the year of monkey in the year 1981, just as there are people born in the year of dog in the year 1983.
Its all part of the Chinese folklore of shi er shen xiao.
If, and only if i am that picky of a Christian, I wouldnt even celebrate CNY at all. Remember that in ancient Chinese mythology CNY was started when firecrackers was started to scare away the monster called Nian. The Chinese term 'guo nian' was established to commemorate this victory over Nian, hence the start of the spring festival.
IMO, dont need to think so much abt it one.
